The Monday Buffet

or: Why our team now sleeps on Mondays instead of serving guests (well, almost)

Dear Guests,

It is time to speak openly. About Mondays. About the buffet. And about what the alternative would have been.

Because yes, this was not an easy decision for us.

At some point last year, we sat down together and asked ourselves a question that many businesses in our industry are currently facing: How can we continue to deliver the level of quality you know and expect from us seven days a week when costs are moving in a direction we could hardly have imagined three years ago? Staffing, energy, food. Everything is becoming more expensive. And not just a little.

Our honest first answer to that question was: a day off. Closed on Mondays. Kitchen closed. Staff off duty.

And I can tell you this: my team would have celebrated that decision. A fixed day off every week is not something that can be taken for granted in hospitality; it is a gift. Every single member of our team would have deserved it.

And it would not have been unusual either. One or two restaurant closing days per week have long since become standard, even in hotels of our category. Many properties you may know have been doing this for years. Nobody is surprised by it. It is simply reality.

Nevertheless, we decided against it. Because we do not want you to arrive at the hotel on a Monday and go to bed with an empty stomach in the evening. That would not be the Bösehof way.

So: a buffet.

Admittedly, every beginning is a little bumpy. We know that. We are still learning what works, what can be presented better, and what might be missing. But the feedback from the vast majority of our guests has been very positive, and we are working every week to make it a little better.

What we can promise you is this: there is real cooking behind it. No convenience products, no shortcuts. And it is not a static solution that will gather dust over time, but a concept that will continue to grow and evolve.

What we can also tell you is that the buffet is entirely optional. If you prefer to stay with us without having dinner in the hotel, that is absolutely fine. No one is being forced to fill a plate.

The Bösehof has always been a place that evolves and adapts. The Monday buffet is part of that journey. We look forward to developing it further together with you.

With warm regards,
Natascha Grotjohann
